~English Scones Recipe~

I make these scones all the time, they're delicious! It takes practice to get the mixing right, so don't worry if they don't come out perfect the first time.

Makes: 6 scones

Ingredients:

2 cups cake flour

4 tsp baking powder

1/2 tsp Salt

2oz butter, room temperature

2 eggs

At least 3/4 cup Milk

 

 

 

 

 

 

 

Preheat oven to 400�F (205�C)

Mix flour, baking powder and salt in a bowl.

Add butter and rub in with fingers until it resembles crumbs.

Beat one egg lightly, pour into a measuring cup, add milk until liquid reaches 3/4 cup.

Add liquid slowly to dry ingredients while mixing. You should have a soft dough, but not wet or very sticky. Don't over mix.

Sprinkle flour on a wooden board or working surface. Turn dough out. Pat out lightly with fingers until about 1 1/2 inch flat, or a little less.

Press out rounds about 2 1/2 inches across.

Gather excess dough and repeat process.

Beat extra egg.

Put the scones on a lined tray, use a pastry brush and brush tops with the beaten egg.

Bake for about 13 minutes until well risen and golden.

Serve fresh out of the oven with jam or marmalade and clotted or whipped cream.
