~Victoria Sandwiches Recipe~

This is a recipe from an old cook book I inherited that dates back to 1897! I've tried to modernize the instructions as best as I can.

I like to make mine with rosewater flavoring and strawberry jam~

Serves: 5-6 people


4 eggs + their weight in:
- Sugar
- Butter
- Flour

Jam or marmalade of your choice

(Optional) Rosewater
(Optional) Icing Sugar






Preheat oven to 350-375 �F (180-190 �C)

Beat the butter to a cream, then dredge in the flour and sugar.

Stir well together.

Whisk the eggs well, then add to the mixture.

Beat for about 10 minutes (Optional: Add rosewater to taste while mixing)

Butter a yorkshire-pudding tin (or a square pan) and pour in the batter.

Bake for 20 minutes.

Let cool then cut cake in half, spread a layer of preserve on one half of the cake then press the pieces together.

Cut into finger-pieces, dust with icing sugar (Optional)

Pile in cross-bars on a glass dish and serve.
